The following ingredients will make 12 small (6" dia) pancakes.

  • 4 eggs
  • 4 oz (440g) plain flour
  • 1 pint (600ml) milk
  • Pinch of Salt

Thoroughly mix the ingredients together. I it in a blender (because I have on) but a cheap option is to put it all in a bottle and shake it vigourously.

Note that the mixture is best if made in advance (it give the flour time to absorb the moisture), so making it the day before and keeping it the fridge overnight is a good move.

It will setter so give it a brief stir before cooking, which is done in a frying pan with a knob of butter.

Pancakes can be served with various sweet or savoury fillings. My favourite is to put a sprinkling of sugar, a dash of lemon juice and a couple of small knobs of butter onto each pancake, roll it up and MUNCH!
